
During my travels in Vietnam, one of the most memorable things I saw did not happen in a restaurant.
It happened early in the morning.
Along the beaches of Nha Trang and Tuy Hoa, I often saw older men and women walking, stretching, swimming and exercising together before breakfast.
Some looked well into their seventies or eighties.
What impressed me was not how fast they moved. It was how consistently they moved.
Watching them made me think about something that becomes increasingly important as we age:
How do we maintain muscle, strength and independence for as long as possible?
I am not a doctor or nutritionist. My background is in stainless-steel cookware development and manufacturing, where I have spent more than 40 years thinking about heat, moisture and what happens to food during cooking.
So rather than offering a medical prescription, I want to look at this question from the kitchen—and from what I have observed in my own life and travels.
Why Muscle Becomes More Important As We Age
Muscle is about much more than appearance.
We use it every time we stand up from a chair, climb stairs, carry groceries, walk through an airport or simply maintain our balance.
As we get older, maintaining muscle can become more difficult. Age-related loss of muscle mass and function is often referred to as sarcopenia.
Nutrition is part of the picture, but it is not the whole picture.
Physical activity—particularly exercises that challenge the muscles—is also important.
That is why I have become less interested in searching for one “miracle food” and more interested in building practical daily habits.
For me, those habits begin with three simple questions:
Am I eating enough good food?
Am I cooking it sensibly?
Am I continuing to move?
- Protein Matters-But More Heat Is Not Better
Protein provides amino acids that our bodies use for many functions, including maintaining and repairing muscle tissue.
Useful protein sources can include:
- Fish and seafood
- Eggs
- Poultry
- Meat
- Dairy products
- Soy foods
- Beans and other legumes
But there is an important distinction between cooking protein and overcooking food.
Cooking changes protein structure. That process, called denaturation, is a normal part of cooking and does not mean that the protein has suddenly become useless.
In fact, cooking can make many protein foods easier and safer to eat.
The practical lesson is much simpler:
Cook food thoroughly and safely, but don’t automatically assume that more heat and more cooking time make it better.
A piece of fish that is properly cooked does not need to remain over high heat simply because the burner is still on.
An egg does not need maximum heat to become breakfast.
After decades around cookware, I have learned to think of heat as a tool—not a competition.
2. Leucine and the Bigger Protein Picture
One amino acid frequently discussed in connection with muscle protein synthesis is leucine.
Foods such as eggs, dairy products, meat, fish and soy can provide leucine as part of their overall protein content.
But I don’t believe most people need to stand in their kitchen calculating individual amino acids before every meal.
A more practical approach is to include a meaningful protein source in regular meals and combine it with a varied diet.
And again, cooking deserves perspective.
You do not need to fear cooking protein.
At the same time, there is usually little advantage in turning every protein food into something dry, tough and heavily charred.
Cook it safely. Cook it well. Then know when to stop.
That may be one of the simplest cooking lessons in this entire series.
3. Vitamin D and Omega 3s; Part of Larger Diet
Vitamin D and omega-3 fatty acids are frequently discussed in research on healthy aging.
Fatty fish such as salmon, sardines and mackerel can provide omega-3 fatty acids, and some foods also contribute vitamin D.
Rather than treating these nutrients as a cure for muscle loss, I think it is more useful to see them as parts of an overall eating pattern.
This is also where cooking technique matters to me.
Delicate fish rarely needs aggressive heat for a long period.
Depending on the dish, moderate heat and careful timing can produce fish that remains moist and enjoyable without unnecessary overcooking.
This is a principle I return to again and again:
Use the heat the food needs—not simply the highest heat the stove can produce.
What About Creatine?
Creatine is naturally present in foods including meat and fish, and it is also widely known as a dietary supplement.
It plays a role in the body’s rapid energy system, including energy used by muscles.
But this article is not intended to recommend supplements or specific doses. Those decisions can depend on a person’s health, medications and individual circumstances and are better discussed with an appropriate healthcare professional.
From a cooking perspective, my interest is simpler.
Meat and fish contain many nutrients and compounds in addition to protein. Cooking changes food in complex ways depending on temperature, time and method.
That is another reason I prefer not to use excessive heat when it isn’t necessary.
My rule remains:
Cook for safety, texture and flavor—not simply for maximum temperature.
5. Vegetables Belong Beside the Protein
One thing I repeatedly noticed while traveling through Vietnam was how naturally fresh vegetables and herbs appeared alongside other foods.
A bowl of noodles might arrive with a plate of herbs.
Grilled meat might be eaten with lettuce, cucumber and fresh greens.
A meal could contain many different textures and ingredients without feeling complicated.
That experience reinforced something I have believed for years:
A meal does not have to revolve entirely around a large piece of meat.
Protein can be one part of the plate.
Vegetables, herbs, legumes, grains and other whole foods can make up the rest.
I prefer this way of thinking to labeling individual foods as “good,” “bad,” “anti-inflammatory” or “miracle foods.”
Look at the whole meal.
What 40 Years Around Cookware Have Taught Me
After more than 40 years working in stainless-steel cookware development and manufacturing, I have become increasingly skeptical of the idea that aggressive heat automatically means better cooking.
Different foods require different techniques.
Sometimes high heat is useful—for browning or searing, for example.
Sometimes gentle heat works better.
Sometimes a lid helps retain moisture and heat.
Sometimes you want evaporation.
There is no single temperature or cooking method that is ideal for every food.
But one principle has remained remarkably consistent throughout my career:
Use enough heat to accomplish the cooking task, but don’t use unnecessary heat simply out of habit.
That philosophy also fits the way I increasingly cook at home: simple ingredients, controlled heat and less unnecessary water when the ingredients already contain sufficient moisture.
It is not a medical treatment.
It is simply a cooking method I have come to appreciate.
A Simple Strength Supporting Kitchen
I no longer believe we need complicated rules for every meal.
Instead, these are the habits I try to keep in mind:
Include a protein source regularly.
Fish, eggs, poultry, dairy, soy, beans and other foods can all contribute.
Put vegetables on the plate.
They should not always be an afterthought or decoration.
Don’t automatically cook everything on maximum heat.
Choose the temperature according to the food and the result you want.
Avoid unnecessary overcooking.
Once food is safely and properly cooked, continuing to cook it does not necessarily improve it.
Keep meals varied.
No single ingredient provides everything we need.
And there is one habit that does not happen in the kitchen at all.
Movement Matters Too
Food alone cannot do all the work.
Muscles are meant to be used.
Walking, climbing stairs, carrying groceries and other daily activities all require muscle, while appropriately designed resistance exercise can be particularly valuable for maintaining strength as we age.
Individual abilities vary, especially for people with medical conditions or mobility limitations, so exercise recommendations should be appropriate to the individual.
This was perhaps the biggest lesson I took from the beaches of Vietnam.
The seniors I watched were not sitting around discussing the perfect protein.
They were moving.
Morning after morning.
A Personal Note
As I get older, I think differently about strength than I did when I was younger.
I am less interested in chasing complicated nutrition trends and more interested in habits that I can realistically repeat.
Eat reasonably.
Cook carefully.
Walk.
Move.
Stay curious.
And keep doing it tomorrow.
During my time in Vietnam, watching older people gather near the beach early each morning reminded me how powerful ordinary routines can be.
I cannot know exactly why any particular person remains strong into old age. Genetics, healthcare, diet, activity and many other factors can contribute.
So I would never claim that Vietnamese seniors are strong simply because of one food or one lifestyle habit.
What I can say is what I saw:
Movement was part of everyday life.
And that is a lesson worth bringing home.
Putting It All Together
Maintaining strength after 60 is unlikely to come from one superfood, supplement, cooking method or piece of cookware.
The bigger picture matters.
Eat a varied diet with adequate protein.
Include vegetables and other whole foods.
Cook food safely without automatically overcooking it.
Continue moving and challenging your muscles in ways appropriate for you.
And repeat those habits consistently.
My years in cookware have taught me something surprisingly similar:
Good results rarely come from maximum heat. They come from understanding what is needed—and using enough.
Perhaps healthy aging works in much the same way.
Not extremes.
Consistency.

They came from watching everyday life.
Before sunrise on the beaches of Vietnam, I watched older people walk, stretch, swim and exercise together.
Then the city began its day.
That image stayed with me.
A good meal matters. Good cooking matters. But we still have to get up and move.
And tomorrow morning, we do it again.
