Stop Throwing Away Broccoli Stems.You’re Discarding the Most NutritiousPart of the Vegetable.

For years, I’ve watched people cut off broccoli stems and throw them into the trash without a second thought.

That stem goes in the bin before the cooking even starts. That’s a significant nutritional mistake.

Here’s what most people don’t know:

The broccoli stem contains comparable levels of fiber, vitamin C, and beneficial plant nutrients to the florets people prize so highly.

It also contains glucosinolates the same sulfur compounds that convert to sulfur Shane, one of the most researched anti-cancer compounds in the human diet.

You’re not throwing away the less nutritious part. You’re throwing away equal nutrition sometimes more fiber per gram than the florets themselves.

The stem also has something the florets don’t:

A naturally sweet, mild flavor and a satisfying crispy texture
when prepared correctly.
Not the bitter, rubbery texture most people associate with overcooked broccoli stems.
That bitterness is a cooking problem not a stem problem.

Here’s how to use the whole broccoli:

Peel the tough outer layer with a vegetable peeler or knife just the exterior, which can be fibrous and exterior, which can be fibrous and slightly bitter.


The interior is tender and sweet. Slice the stem thinly about
¼ inch rounds or matchsticks so it cooks at the same rate as
the florets. Cook everything together gently.
