Let me tell you something that changed how I cook breakfast every single morning.
Eggs are nutritionally extraordinary. They are the reference protein against which all other dietary proteins are measured a “perfect score” of amino acid completeness that no other single food matches. They contain Vitamin D, choline for brain health, lutein and zeaxanthin for eye protection, B12 for neurological function, and healthy fats that support fat-soluble vitamin absorption.
And most people cook them in a way that systematically destroys all of it.
I’ve spent 40 years engineering cookware and studying how heat interacts with food. And eggs are one of the clearest examples I know of where cooking temperature — not ingredients, not preparation, but temperature alone — determines whether you’re eating a nutritional powerhouse or a significantly depleted version of one.
What Overcooking Actually Does to Eggs
Protein quality decreases and AGEs form.
This is the most critical consequence — and the least understood.
When eggs are cooked-at high temperatures fried on a screaming hot pan, scrambled until rubbery, hard boiled for too long the proteins undergo what’s called advanced glycation end-product (AGE) formation. AGEs are harmful compounds created when proteins react with sugars under high heat. They are associated with increased inflammation, oxidative stress, accelerated aging, and reduced protein digestibility.
The scrambled eggs that look brown and slightly crispy at the edges? That browning is AGE formation. The rubbery texture of overcooked eggs? That’s denatured protein with reduced bioavailability.

Research has consistently shown that high-heat cooking methods produce significantly higher AGE levels in eggs compared to low-heat methods. The same egg, cooked two different ways, delivers meaningfully different nutritional outcomes.
Choline is heat sensitive.
Choline found abundantly in egg yolks is one of the most important nutrients for brain health, liver function, and fetal development. It is the precursor to acetylcholine, the neurotransmitter critical for memory and cognitive function. For seniors, consistent choline intake is directly linked to cognitive maintenance.
High-heat cooking degrades choline content in egg yolks. Studies have shown meaningful reductions in choline bioavailability when eggs are cooked at high temperatures compared to gentle methods.
Lutein and zeaxanthin — the eye-protective carotenoids are damaged by excessive heat.
As I covered in the eye health post, lutein and zeaxanthin concentrate in the macula and protect against age-related macular degeneration. Egg yolks are one of the most bioavailable sources of these carotenoids — because the fat naturally present in yolks enables absorption.
But these carotenoids are heat-sensitive. Overcooked, browned, or charred yolks have meaningfully lower lutein and zeaxanthin content than gently cooked ones.

The omega-3 fatty acids and other healthy fats in egg yolks — particularly in pasture-raised eggs oxidize when exposed to high cooking temperatures. Oxidized fats are pro-inflammatory. The same principle that applies to cooking salmon at high heat applies to egg yolks.
The Right Why to Cook Eggs
The goal is to cook eggs to food safety while preserving protein quality, choline, lutein, zeaxanthin, and healthy fat integrity without the AGE formation and nutrient degradation that high-heat methods cause.
Method 1: AirCore Low-Heat Soft Scrambled (Best Method)

Method 2: Gentle Poaching
Poached eggs cooked in sub-boiling water around 75–80°C — are among the lowest-AGE cooking methods available. The water temperature is high enough to set the protein gently without the oxidation and AGE formation of high-heat methods.
No added fat required. Protein quality preserved. Choline and lutein retained.
Method 3: Soft Boiled
Soft boiled eggs where the yolk remains runny or semi-liquid preserve more choline, lutein, and healthy fats than hard boiled eggs where the yolk is fully set and cooked through.
The partially liquid yolk retains more of its nutritional integrity than a fully cooked one. This is one case where texture and nutrition align perfectly.
What to avoid:
High-heat frying the method that produces the most AGEs and the most oxidized fat. Occasional use is fine. Daily use as the primary egg cooking method works against the nutritional reasons for eating eggs.
Over-scrambled eggs cooked until dry and slightly browned the browning indicates AGE formation. If your scrambled eggs are browning, the heat is too high.
Hard boiled eggs cooked for more than 10 minutes the grey-green ring that forms around the yolk indicates sulfur compounds produced by overheating, and signals that choline and lutein in the yolk have been significantly degraded.
The Choline Connection Most People Miss
Choline deserves special attention because it is so consistently overlooked in discussions of egg nutrition.
Most people know eggs are a good protein source. Far fewer people know that egg yolks are one of the richest dietary sources of choline available and that most people, particularly seniors, consume far less choline than their brains require.
Choline supports the production of acetylcholine the neurotransmitter that enables memory formation, muscle control, and cognitive function. Low choline intake in older adults is associated with cognitive decline, liver dysfunction, and impaired muscle function.
And the choline in egg yolks is most bioavailable when the yolk is gently cooked not when it’s been subjected to high heat that degrades both the choline and the fat that helps absorb it.
Eat your yolks. Cook them gently.
What I Do Every Morning
After 40 years studying how heat affects food, and twenty years of applying these principles to my own diet since my angina diagnosis, here’s my actual approach:
I use my AirCore pan on the lowest heat setting. I add a small amount of olive oil. I crack two eggs directly into the pan and scramble them slowly, continuously, never letting the heat get high enough to brown the edges. I remove them from heat while they’re still slightly soft they finish cooking in the residual heat of the pan.
The eggs are creamy, soft, and deeply flavored. They take three minutes. And the protein, choline, lutein, and healthy fats that I’m eating them for arrive at my plate intact not degraded in a too-hot pan.
