Nem Nướng Vietnam: What This Grilled Pork & Vegetable Wrap Taught Me

When I first saw Nem Nướng in Vietnam, I thought the grilled pork would be the star of the meal.

But when the food arrived at the table, something else caught my attention.

There was grilled pork, of course.

But surrounding it were piles of fresh lettuce, cucumber, herbs, vegetables and rice paper.

By the end of the meal, I realized something:

I had probably eaten more fresh vegetables than grilled pork.

That simple meal gave me another lesson about the way food is enjoyed in Vietnam.

What Is Nem Nuong?

Nem Nướng is a popular Vietnamese dish made with seasoned grilled pork.

It is commonly served with rice paper and a variety of fresh ingredients such as lettuce, cucumber and aromatic herbs, along with a dipping sauce.

Instead of eating the grilled pork by itself, you can place a small portion inside the rice paper, add vegetables and herbs, wrap everything together and enjoy it in one bite.

The grilled pork provides a smoky, savory flavor.

The vegetables add freshness and crunch.

The herbs bring aroma.

And the rice paper brings everything together.

One small piece of grilled meat becomes part of a much larger bite filled with fresh ingredients.

That was what interested me most.

I Came for the Grilled Pork, but Ate the Vegetables

During my travels in Vietnam, I have noticed that many meals do not treat vegetables simply as decoration.

They are part of the meal itself.

Nem Nướng is a good example.

You take a little grilled pork.

Then some lettuce.

A slice of cucumber.

Several fresh herbs.

Then you start again.

Without really thinking about it, I found myself eating vegetables with almost every bite.

For someone who has spent decades thinking about cookware, ingredients and cooking methods, this was an interesting reminder:

Sometimes a more balanced meal doesn’t begin by removing the foods we enjoy. It begins by changing what we eat with them.

Nem Nướng showed me another possibility.

Savory and crisp.

It also makes the meal more interesting.

I wasn’t thinking about eating a bowl of vegetables.

I was simply enjoying Nem Nướng — and the vegetables naturally became part of the experience.

What 40+ Years Around Cookware Have Taught Me

After more than 40 years working in stainless steel cookware development and manufacturing, I have come to appreciate a simple idea: good cooking isn’t always about adding more.

Sometimes it is about allowing the ingredients themselves to play a larger role.

Fresh vegetables already contain their own moisture, texture, aroma and natural flavor.

Herbs bring another layer of freshness without requiring complicated preparation.

That philosophy is also one reason I became interested in cooking methods that respect the natural characteristics of ingredients.

The goal isn’t to make food complicated. It is to avoid taking away what good ingredients already have.

Nem Nướng reminded me of that in a very simple way.

A Lesson I Will Take Home From Vietnam

Travel has taught me that useful ideas about food don’t always come from cookbooks.

Sometimes they come from sitting at a small table and watching how local people eat.

Nem Nướng gave me one of those moments.

I came to enjoy grilled pork.

I left thinking about vegetables.

And perhaps that is the lesson:

You don’t necessarily have to give up the foods you enjoy to build a more balanced plate. Sometimes you simply need to give fresh ingredients a bigger place beside them.

The next time you eat grilled meat, try adding more lettuce, cucumber and fresh herbs.

You may find that the vegetables don’t feel like a side dish anymore.

They become part of what makes the meal enjoyable.
